Thank you for posting this.I have always used the juice from my canned vegies but I taste it to be sure it has some flavor and I check the label for things I don't want like MSG .

You know, this would be a good base for gazpacho. It's a cold summer vegetable soup.

I also save veggie scraps and peelings for veggie broth. Works great! Then, the used pieces can go either in the garbage, or preferably, the compost bin :+D
