How to make it

  • Coat large,non-stick skillet wit cooking spray;heat over med-high heat. Sprinkle chicken with rosemary,1/2 tsp salt and 1/4 tsp pepper. Cook chicken till browned,turning once,5 to 6 mins per side.
  • Remove to plate;reserve. Coat same skillet with cooking spray; cook pepper stir-fry and mushrooms over med-high heat,8 mins.Add wine and boil 1 min. Add tomatoes and chicken. Cover; reduce heat to medium and simmer 8 mins.
  • Uncover;simmer until sauce has thickened and chicken is cooked through,5 mins. If desired,serve over rice.

    I think this sounds great Pat. The only thing I don't think we have a frozen pepper stir fry in the stores here. Will look - if not, I will use fresh. Sounds easy adn the flavors are great.
