How to make it

  • Place the raisins, sugar, and the lemon in a large stone or ceramic jar.
  • Add 6 quarts of boiling water and stir every day for a week, covering with a towel.
  • Then strain and bottle. Let sit for another 10 to 12 days.

  • Method 2
  • To two pounds of raisins (cut in half if desired), add three quarts of cold water.
  • Either place the mixture on a corner of the range and let it simmer for two or three days or boil it until one-third of the water has evaporated.
  • A few tablespoons of sugar and a handful of stick cinnamon can be added if additional sweetness and flavoring are wished.
  • When cold strain through a fine cloth.
  • The strength of the wine depends largely upon the quality of the raisins.

  • Method 3
  • Seed and chop 1 lb. raisins, put into a stone jar with 1/2 lb. sugar andhalf a sliced lemon.
  • Pour over 2 quarts boiling water and stir till sugar
  • has dissolved.
  • Cover with muslin and stir every day for a week.
  • Then strain and bottle.
  • Ready for use in 10 or 12 days.

    I prepared two jugs according to the recipe given, and now I'm just storing it for 10-12 days, but I snuck a taste to see how well my efforts were, and it was absolutely delicious. Dessert wine worthy, indeed! Smooth and sweet, the fact that it was homemade made me want to savor the glass even more! Can't wait until 12 days pass...heck, I might just wait a bit longer and serve it up on Thanksgiving! It seems it would go really well with li hing mui seeds or powder dusted in lemon. Wonderful recipe!
