This is a very good pasta dish and easy to make on any given day.

Ingredients
  • 1 t olive oil
  • 2 cloves garlic, minced
  • 3 md red peppers, chopped
  • 1 C chicken broth
  • 8 oz fusilli pasta
  • 1 C fresh or frozen, thawed, broccoli flowerets
  • 1 t dried basil
  • 1/4 t red pepper flakes
  • 1/4 C parmesan cheese

Directions
  1. In a large skillet, heat oil, add garlic and red pepper and broth; simmer until for about 7 minutes
  2. Cook pasta, drain
  3. In a blender, or food processor, process mixture until smooth.
  4. Return pepper mixture to skillet and add remaining ingredients but the cheese and pasta, simmer until heated through, about 8 minutes
  5. Serve red pepper mixture over pasta and sprinkle with cheese
  6. Enjoy!
