How to make it

  • Pre-heat oven to 375
  • pierce potatoes with a fork
  • bake at 375 for and hour or so or until tender
  • cool potatoes slightly
  • Heat oil in a medium skillet over medium-low heat Add onion, ginger, and garlic, cook 3 mins. add cumin, coriander, and pepper, cook 1 min. Add 3/4 cup of H20 and then tomato sauce, PB, sugar and salt! stirring until smooth, bring to a simmer and Cook 2 mins. or until thick
  • Split potatoes lengthwise, cutting to, but not through, other side, spoon about 1/4 cup sauce onto each potato with 1 teaspoon of cilantro!

    Tater Tips!
    Wash the potato thoroughly, get all the nooks and crannies! anywhere dirt may collect! poke it with your fork so it does not burst, I know you grew up seeing Mom wrap them in foil, but pass on that! A foil wrapper will cause it to steam, rather then bake, and prevent the skin from becoming crisp
