Ingredients
  • 4 eggs
  • 2/3 c. flour
  • 1 tsp. salt
  • 2/3 c. milk
  • 3 tbsp. butter

Directions
  1. Butter a heavy 10" oven proof skillet (cast iron)
  2. Pre-heat oven to 450 degrees.
  3. Beat the eggs with a fork to blend.
  4. Slowly add flour, beating constantly.
  5. Stir in salt and milk.
  6. Pour the batter into the skillet & drop the butter by teaspoonfuls into the batter, spreading evenly.
  7. Bake at 450 degrees for 15 mins.
  8. Reduce heat to 350 degreesand bake another 10 mins.
  9. Remove from oven and sift powdered sugar over the top.
  10. Serve with heated maple syrup!

That is soooooo cool. I've read about these! Now I can make them because I can see how beautiful they are. I love it!


Peel and thinly slice (or chop) 2 lbs apples, saute in 1/4 lb butter, then mix in 1 t. cinnamon and 1/2 c. brown sugar. Pour the batter above on top and bake it and you have a German Apple Pancake.


These are just the best breakfast treat ever (I grew up on pop-overs, and the pancake is so much easier!). I like to drizzle some honey or pure maple syrup over it - and bondc's apple suggestion would be excellent, too. Great post - great picture!

Oh memories of college and all nighters studying, capped off at the Ole South Pancake House in Ft. Worth! Just need lemons and lingonberries! ! Got to try this on Saturday.


Thank You for posting this Recipe. I have been eating at Ol' South since I was a child. I have tried to find my own version for years. I always plan a special trip to eat my pancake every year... I will be going a few days before Thanksgiving this year, Yeah!!!! But now I will be able to have my own Pancake anytime. THANKS :-)

you all should try this Finnish version of this pancake here is the recipe:

Pannu Kakku (Finnish Oven Pancake)
5 eggs
2 cups whole milk
1-1/4 cups flour
1/2 tsp. salt
1/2 cup sugar
1/2 cup (1 stick) butter
Directions: In a large bowl, beat eggs with a fork, wire wisk or egg beater. Gradually add 1/2 cup of milk. Add remaining milk, flour, salt and sugar. Beat until smooth.
Melt butter in a 13x9-inch glass pan by placing it in the oven until the butter melts and pour mixture into it. Do not mix the butter in. Bake at 450°F for 30 minutes or until top becomes brown.( i used a 10.5 inch cast iron instead)
Serve plain, with syrup, or covered with berries. (i used powered sugar)

Wonderful recipe, a family favorite.


My family and I are in love with this fun breakfast! the only thing i don't get is how to keep it puffy! as soon as i take it out of the oven it deflats. still yummy and still love it! I've cooked it with adding vanilla (2 tsp) cinnamon, allspice and nutmeg.

I've made a German Pancake before, but never in a cast-iron skillet. I loved the suggestions of adding apples and the vanilla and spice mixture. Thanks for reminding me of this wonderful and easy breakfast.
