Spicy Meatball Noodle And Vegetable Soup

- seasonED beef broth MIXTURE: shopping list
- 2 Cans of low sodium beef broth. shopping list
- 2 carrots peeled and sliced. shopping list
- 2 Stalks of celery leaves and all chopped. shopping list
- 1 Medium onion diced. shopping list
- 1 Heaping teaspoon of minced garlic. shopping list
- MEAT MIXTURE: shopping list
- 1 roll of hot and spicy sausage. shopping list
- 1 1/2 Pounds of lean hamburger. shopping list
- 1 or 2 Tablespoons of Montreal seasoning or to taste. shopping list
- 1 1/2 Teaspoons of freshly ground black pepper or to taste. shopping list
- 1 Small onoin finely diced. shopping list
- 1 Small bell pepper finely diced your choice of colors. shopping list
- 1 1/2 Teaspoons of garlic powder. shopping list
- 1 1/2 Teaspoons of toasted onion powder. shopping list
- SOUP MIXTURE: shopping list
- 2 Small bags of Reames egg noodles unless you make your own. shopping list
- 1 Small head of cabbage chopped. shopping list
- 1 small onion chopped. shopping list
- 1/2 to 1 bag of baby carrots whole. shopping list
- 1 Pint of home canned green beans or store bought if you don't can juice and all. shopping list
- 1 Pint of canned corn on the cob or store bought if you don't can juice and all. shopping list
- 1 Pint of canned peas or store bought if you don't can juice and all. shopping list
- 1 Can of tomato juice if you don't make your own or else 1 quart of home canned. shopping list
- 1 Palmful of crushed red pepper. shopping list
- 2 to 3 More stalks of celery chopped. shopping list
- 2 Heaping Tablespoons of balsamic vinegar or to taste (I like it). shopping list
- 4 potatoes chopped. shopping list
- 2 TBSPS. of freshly ground black pepper. shopping list
- 1 TBSP of minced garlic. shopping list
How to make it
- Empty the 2 cans of beef broth in a medium saucepan.
- Add carrots,celery,onion and garlic bring to a boil then reduce heat and simmer for APPROX. 1 hour with a lid on.
- While the broth is working mix the meat mixture together and combine well then make as many meatballs the size of quarters or just a little bigger as you can.
- Cover a baking sheet with foil then space the meatballs evenly on the baking sheet.
- Bake them at 350 degrees for 30 to 45 minutes or until done.
- While the meatballs are baking put the soup mixture in a large stew pot add the seasoned beef broth and tomato juice and the meatballs as they are done. Then bring to a boil then reduce heat and simmer until all vegetables and noodles are soft. If your meatballs have charred pieces on them when they come out of the oven add those pieces to just more flavor LOL
