How to make it

  • Split the vanilla pod in half lengthways and scrape out the seeds by running a knife along the inside of each half. Put the mascarpone, cream, vanilla seeds, and sugar into a large bowl and whip until shiny.
  • Spread the sweetened cream in the pastry case. Smear it all round so it’s reasonably level, then cover it with the berries – place them lightly on the cream, no need to push them in. Chill.

    Sounds (relatively) easy, rich yet light. Very nice indeed.

    Ahmed, I have questions for you. Our son is getting married (we love the girl), wants a small wedding, wants me to make the cake. I am of course happy to be asked. The only problem is that they have chosen to be married in a lovely place about 450 km and 8 hrs' drive from where we live. We are planning to make a little vacation of it, and to drive up (staying overnight on the way) three days before the wedding itself. We can have access to a refrigerator the first night--probably all the nights. I am planning to make a Reine de Saba with a chocolate couverture, and to freeze this the night before we leave, and to take it up in a cooler with dry ice. Do you think this will work? Do you think the cake will still be good? Do you have any other thoughts or ideas? I would very much like to hear your knowledgeable and professional opinions about this plan.

    I wonder what would happen if you put the berries in the middle of the cream and on top? As you can see, I love berries of all kinds. Guess I'll have to try it both ways. Thanks for the recipe - temptation, for sure.
