Skinny Pumpkin Vegan Brownies Recipe

  • 15 oz canned pumpkin puree
  • 1 cup unsweetened applesauce
  • 1-6 ounce cup Source fat free plain yogurt
  • 1/ 2 cup demerara sugar
  • 1 tbsp vanilla extract
  • 2 tbsp pumpkin pie spice
  • 1 1/2 cups "Just Like Sugar" Sweetener (or granulated sugar)
  • 1 cup whole wheat flour
  • 1 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Directions
  1. Preheat oven to 350 F, lightly grease or line a 9" square pan.
  2. In a large bowl, combine pumpkin, applesauce, yogurt, demerara sugar, vanilla and pumpkin pie spice until well blended.
  3. In a smaller bowl, whisk "Just Like Sugar", flour, cocoa, baking powder and salt together.
  4. Add flour mixture to the wet ingredients and combine gently.
  5. Spread evenly in the prepared pan.
  6. Bake 20-30 minutes. Allow to fully cool before slicing.
