How to make it

  • Mix crust ingredients together, just till coated and crumbly.
  • Press onto the bottom and 2/3 up the sides of an 8" springform pan. Bake for 5 min. at 350. Set aside.
  • Combine cheese, sugar and vanilla in large bowl, mix until smooth with an electric mixer. add pumpkin eggs, and spices, beat till smooth and creamy
  • . Pour into the crust. Bake for 60-70 min. or till the top turns a bit darker
  • Remove from oven and allow to come to room temperature, then refrigerate.
  • After it has thoroughly chilled, remove the pan sides and cut. Serve with whipped cream.

    FANTASTIC!! :D I tried pumpkin cheesecake for the first time a couple years ago and it was SO GOOD and I've been looking for a good recipe ever since but wasn't able to find one that was as good as the first one I tried... Until now. So glad I found this recipe!
    The only thing I did differently was I used crushed gingersnaps instead of graham crackers for the crust, just to give it a little spice and a little more depth. WAS AMAZING!!

    this is perfect, this happens to be the first thanksgiving that I'm in charge of dessert and I wanted to make pumpkin cheesecake ... but I didn't have a recipe, so this is perfect!!
