How to make it

  • In appropriately sized iron skillet or other shallow oven proof dish, melt butter. Set aside.
  • Peel and dice potatoes (1/2 inch dice). Transfer to a bowl and add salt, pepper, parsley to your taste and your choice of optional additions. Stir to combine. Set aside.
  • In another bowl, combine flour and parmesan cheese and stir to combine.
  • Sprinkle over melted butter in iron skillet and DO NOT MIX.
  • Evenly distribute the potato mixture over the flour mixture. DO NOT MIX.
  • Bake in 350* to 375* over for an hour or until done.
  • When baked through invert baking vessel onto serving plate. Sprinkle with additional parsley as garnish.
  • Note: This dish can be baked at different temperatures if you have other things in the oven at the same time. It multiplies very well and you can serve many guests easily.
