How to make it

  • Heat oil in skilltet and saute onions till caramelized
  • Slice the potatoes very thin using a mandolin or hand slicer
  • Place potatoes in a large mixing bowl
  • Combine cream and maple syrup in a saucpan and scald mixture
  • Pour hot mixture over the potatoes, toss to coat well
  • layer potatoes in a 9 x 13 baking dish
  • Sprinikle salt over about 5 - 6 layers of potatoes
  • Pour on the remaining maple cream until it comes up about 3/4 over potatoes
  • Finish with a layer of the caramelized onions
  • Cover with foil and bake in a preheated 375 oven for 30 minutes
  • Uncover and bake about 20 minutes longer or potatoes are soft when tested with point of a knife
  • Remove from oven and let rest about 30 minutes before serving
