Sweet Potato Gratin

- 1/4 cup canola oil shopping list
- 2 large onions thinly sliced shopping list
- 8 medium sweet potatoes peeled shopping list
- 2 cups heavy cream shopping list
- 1 cup maple syrup shopping list
- salt and pepper shopping list
How to make it
- Heat oil in skilltet and saute onions till caramelized
- Slice the potatoes very thin using a mandolin or hand slicer
- Place potatoes in a large mixing bowl
- Combine cream and maple syrup in a saucpan and scald mixture
- Pour hot mixture over the potatoes, toss to coat well
- layer potatoes in a 9 x 13 baking dish
- Sprinikle salt over about 5 - 6 layers of potatoes
- Pour on the remaining maple cream until it comes up about 3/4 over potatoes
- Finish with a layer of the caramelized onions
- Cover with foil and bake in a preheated 375 oven for 30 minutes
- Uncover and bake about 20 minutes longer or potatoes are soft when tested with point of a knife
- Remove from oven and let rest about 30 minutes before serving
