How to make it

  • In a large bowl, combine 2/3 cup flour, sugar, undissolved yeast, minced onions, dill seed, salt, and baking soda. Heat water, ricotta cheese, and 1 tablespoon butter until very warm (120℉ to 130℉). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add egg, mozzarella cheese, and 1 cup flour; beat 2 minutes at high speed. Stir in remaining flour to make a stiff batter. Cover; let rest 10 minutes.
  • Turn batter into greased 1 ½ quart casserole; smooth top with floured hands. Cover; let rise in warm, draft-free place until doubled in size, about 45 minutes to 1 hour.
  • Bake at 375℉ for 35 minutes or until done. Remove from casserole to wire rack. Brush with melted butter; sprinkle with coarse salt, if desired.

Yum! :) Made this for dinner, but had to taste a piece with butter.... delicious! I did use dill weed, because we aren't fans of seed, and I used honey instead of sugar. I baked it in my cast iron. Dense, moist, wonderfully flavored bread. Took a pic, but the lighting made it a lil "green"... so gonna try again, and I'll post which ever turns out best, tonight. :) Thanks, P7O! :)
