How to make it

  • Preheat oven to 350 degrees.
  • Sift together all the dry ingredients. Make a well in the center. Blend in the remaining ingredients except the strawberries and cream cheese. Spoon the batter into a wax paper-lined 12-unit muffin pan.
  • Place 1 or 2 berries in the center of the batter in each muffin mold. Whip the cream cheese and place in a small pastry bag with a 4 tip (or cut off the corner of a plastic sandwich bag).
  • Squeeze about 1 tbs of cream cheese into and on top of the strawberries. Bake for 35-40 minutes.

    I poured the muffin batter into mini bundt cake pans and they were good, but a little dry. I should have added a bit more oil. Still it was a nice treat when topped with French vanilla ice cream.
