How to make it

  • The night before cooking , place the beans in a bowl and add water until it covers them and add a tablespoon of sodium bicarbonate .
  • This will tenderise the beans , needing less time to cook .
  • Rince the beans thouroughly , place them in a sauce pan and add COLD water until it covers them about 3 cm .
  • Bring to boil , simmer for 15 min and discard the froth that is created , as they boil .
  • Rince again , discarding the water they boiled in , place them in the sauce pan again , add COLD water just as above .
  • Bring to boil and then , lower the temp to simmer .
  • Add the olive oil , onions , celery , garlic , laurel leaves and spices .
  • In a non-sticky pan , stir-fry the pork dices with the butter until brown .
  • Add the pork dices with the melted butter in the sauce pan .
  • Slowly simmer for about 80 min until the beans and meat are tender , being careful to check , every now and then , adding some HOT water if needed .
  • If you want the dish brothy , simmer more to evaporate water .
  • If you want the dish "soupy" add some HOT water.
