Homeade Sausage

- 2 LB pork shoulder cut into cubes 1/4 in thick shopping list
- 1 TBS fennel seed ground shopping list
- 1 TSP dried chilli ( d'arbol) shopping list
- 1 tsp ground black pepper shopping list
- 3 cloves fresh garlic grated shopping list
- 1 tsp salt shopping list
- 15 Sicilian olives rough chopped shopping list
- 1/4 cup romano cheese shopping list
How to make it
- Cut pork into 1/4 in slices
- freeze for 30 minutes
- cut 1/4 in slices into 1/4 strips
- cut 1/4 in strips into cubes
- Grind meat through a meat grinder and set in a stainless steel bowl.
- Mix in the spices and add cheese and olives then regrind and allow meat to sit for 24 hrs in a plastic bag.
- form 1/8 in patties
- Fry for 5 minutes per side and cover with cheese and tomato sauce.
- I make patties and sometimes I stuff them in casings.

Yeah!!! mmmm... Can't beat homemade!!! I can't make anything decent out of a 'box' serious man, even mac it gets stuck or is soggy bleh I give this one a 'HIGH FIVE FORKS!!!!'
