How to make it

  • In a large bowl (or bag), combine the chicken, lemon juice and zest, salt, pepper, and cayenne. marinate for 1 hour (can go shorter but not longer)
  • saute the onion and garlic in the oil over medium-high heat for 3-5 minute
  • add the chicken and cook 12-15 minutes, turning once
  • add the tomato and the ginger, cook 3 minutes, stirring
  • lastly, add the coconut milk and simmer until the chicken has cooked through and the sauce has thicken, anywhere between 10-15 minutes
