Braised Chicken with Caramelized Onions

- 2 large onions shopping list
- 1 tablespoon extra virgin olive oil shopping list
- 1 tablespoon unsalted butter shopping list
- 1 whole chicken, skinned and quartered shopping list
- 4 cloves garlic, coarsely chopped shopping list
- 2 jalapeno peppers, seeded, stemmed and coarsely chopped shopping list
- 1 (1-inch knob) fresh ginger, peeled and sliced or chopped shopping list
- 1 cup fresh orange juice shopping list
- 1 teaspoon cumin shopping list
- 1 teaspoon coriander shopping list
- 1/2 teaspoon black pepper shopping list
- 1 cup low-sodium or homemade chicken broth shopping list
- 1/2 cup white wine shopping list
- Pinch saffron shopping list
- salt, to taste shopping list
How to make it
- Peel 1 of the onions and cut in lengthwise. Slice thinly and set aside.
- Peel the second onion and chop coarsely.
- Heat the oil and butter together in a heavy skillet over moderately high heat. Season the chicken with some salt and pepper, then add to the oil and sear, 3 - 4 minutes per side, or until lightly browned. Transfer to a plate and set aside.
- Add the sliced onion to the pan, and cook, stirring occasionally for 10 - 12 minutes, or until caramelized.
- Meanwhile, in the work bowl of a blender or food processor, combine the diced onion, garlic, jalapeno, ginger and orange juice; puree until smooth and set aside.
- When the onions are caramelized, add the cumin, coriander and pepper to the skillet; saute 30 seconds. Add the orange juice mixture, chicken broth, wine and saffron; stir well to combine.
- Place the chicken pieces into a baking dish, pour the sauce over and bake, at 350 degrees F, for 45 minutes. Serve with some steamed rice.
