How to make it

  • Peel 1 of the onions and cut in lengthwise. Slice thinly and set aside.
  • Peel the second onion and chop coarsely.
  • Heat the oil and butter together in a heavy skillet over moderately high heat. Season the chicken with some salt and pepper, then add to the oil and sear, 3 - 4 minutes per side, or until lightly browned. Transfer to a plate and set aside.
  • Add the sliced onion to the pan, and cook, stirring occasionally for 10 - 12 minutes, or until caramelized.
  • Meanwhile, in the work bowl of a blender or food processor, combine the diced onion, garlic, jalapeno, ginger and orange juice; puree until smooth and set aside.
  • When the onions are caramelized, add the cumin, coriander and pepper to the skillet; saute 30 seconds. Add the orange juice mixture, chicken broth, wine and saffron; stir well to combine.
  • Place the chicken pieces into a baking dish, pour the sauce over and bake, at 350 degrees F, for 45 minutes. Serve with some steamed rice.

    Ok, just had to come back and give you high-five forkage for this one. My guy devoured it! I was kind of worried that there were too many strong flavors going on but they all mellow out wonderfully as they cook with the chicken and sit perfectly on top of the caramelized onions. Good stuff. =)
