Sicilian Style Roast Chicken

- 1 whole 4-5 lb. chicken shopping list
- 2 lemons shopping list
- 1-1/2 Tbs fresh rosemary,picked shopping list
- 1 large,sweet onion,sliced thin shopping list
- 3 tbs EVOO shopping list
- salt shopping list
- fresh ground black pepper shopping list
How to make it
- Cut one lemon into thin slivers and place in bowl. Squeeze the juice out of the other lemon into the bowl,then slice the remainder of the lemon and add to bowl. Add the picked rosemary,slice onions, and olive oil.
- Season chicken liberally with salt and pepper,inside and out. Rub the chicken with the mixture from the bowl. Fill the cavity of the chicken with the remainder of the mixture. You may cook as is or allow to marinate for up to 3 days before cooking.
- Place the chicken on a baking sheet and bake for 15 mins.at 375 degrees Then reduce the temperature of the oven to 275 degrees and allow to cook another 40 mins. Remove the chicken from the oven and allow the chicken to rest at room temp. dor at least 30 mins. before carving.
