RICH LEMON BARS

- Crust: shopping list
- 1 cup all-purpose flour shopping list
- 5 Tablespoons powdered sugar shopping list
- 1/2 cup (1 stick) cold butter shopping list
- Filling: shopping list
- 3 eggs shopping list
- 1 cup granulated sugar shopping list
- 3 Tablespoons all-purpose flour shopping list
- 1/4 teaspoon baking powder, very slightly rounded shopping list
- 1/3 cup fresh lemon juice, strained to remove seeds shopping list
- 1 teaspoon grated lemon rind (optional) shopping list
- Additional powdered sugar shopping list
How to make it
- Heat oven to 350 degrees. In a medium bowl, combine 1 C. flour and powdered sugar for crust. Cut in butter until mixture is crumbly. Press evenly onto the bottom of a greased or parchment paper lined 8-inch square baking pan. Bake 15 minutes or until edges are lightly browned.
- Reduce oven temperature to 325 degrees.
- Meanwhile, in another medium bowl, whisk together all of the filling ingredients except powdered sugar. Pour over hot baked crust. Return pan to the oven and bake 15-20 minutes or until filling is SLIGHTLY jiggly in the center (it will firm up while cooling). Cool completely and cut into bars. Sprinkle with additional powdered sugar. Store, covered, in the refrigerator.
