How to make it

  • In a large heavy skillet, combine the flour and oil until smooth. Cook and stir over medium heat until flour is a rich deep brown. Add the onion, green pepper, celery and garlic; cook for 5-6 minutes or until vegetables are tender. Stir in the tomatoes, tomato paste, bay leaves, Worcestershire sauce, hot pepper sauce, salt and pepper. Cover and simmer for 45-50 minutes.
  • Add shrimp. Simmer, uncooked, for 5-6 minutes or until shrimp turns pink. Discard bay leaves. Serve over rice. Yield: 6 servings
  • Diabetic Friendly: Diabetics should use the Brown or Long grain rice.
  • Nutritional Values: Calories per serving: 298, Fat: 12g, Cholesterol: 224mg, Sodium: 328mg, Carbohydrate: 20g, Fiber: 3g, Protein: 27g
  • Note; I have modified the original recipe to a Diabetic friendly one.
