Southwest Chicken Mac-n-cheese Bake

- 5 to 6 chicken breasts diced penny size pieces. shopping list
- 6 cups of water divided. shopping list
- 1/2 jar of your favorite picante sauce or more to taste I used medium pace. shopping list
- 2 tsps. of white pepper. shopping list
- 2 tsps. garlic powder. shopping list
- 1 heaping tsp. of Montreal seasoning. shopping list
- 2 tsps. or more to taste of rainbow peppercorns. shopping list
- 1 1/2 tsps ground sea salt. shopping list
- 3 Tbsps. chicken bouillon granules. shopping list
- 1 medium onion finely diced. shopping list
- 1 Tbsp. minced garlic. shopping list
- 3 cups of macaroni uncooked. shopping list
- 2 cups of shredded pepper jack cheese. shopping list
- 1 cup of shredded Monteray cheese. shopping list
- 1 cup sharp or your favorite shredded cheddar cheese. shopping list
- 8 ounce bag of shredded Habenaro cheese for topping. shopping list
- 8 ounce bag of shredded sharp or your favorite cheese for topping. shopping list
How to make it
- Dice chicken into penny size pieces put into Dutch oven as you dice them.
- Add 4 cups of water.
- Add all spices plus onion and garlic.
- Bring to a boil continue boiling until chicken is cooked through 10 to 15 minutes.
- Use large slotted spoon and remove chicken and set aside.
- Add remaining 2 cups of water bring to a boil.
- Add macaroni cook until tender.
- Add chicken back to Dutch oven with macaroni.
- Add the 2 cups of shredded pepper jack cheese,1 cup of shredded Monteray cheese,1 cup of shredded sharp cheddar cheese.
- Mix until chicken,macaroni and cheese and are well combined.
- Add picante sauce mix well and bring to a slow bubble not boiling.
- Pour into a 13X9 casserole dish.
- Top with 8ounces of habenero cheese and 8 ounces of shredded sharp chedder cheese
- Bake at 350 degrees just until cheese is melted.
- Serve with Baked potato and breaded tomatoes.
- YOU CAN CUT OUT SOME OF THE CHEESE IF YOU WANT. DON'T WANT ANYONE TO GET BOUND UP. LOL.
