How to make it

  • Preheat oven at 350 F.
  • Beat margarine, egg, and applesauce at medium speed of an electric mixer until blended. Add sugar substitute and vanilla.
  • Combine flour and the next 3 ingredients; add to applesauce mixture. Beat at medium speed for 4 minutes. Add pecans and dates; stir well. Pour batter into an 8-inch x 4-inch x 3-inch loaf-pan coated with cooking spray. Bake at 350 F. for 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes; remove from pan and cool completely on wire rack. Yield: 16 slices Serving size 1 slice.
