How to make it

  • In large,nonstick skillet,heat 1 tsp oil over med.Add eggs,cook ,without stirring until just set,1 to 2 mins.Transfer to cutting board. When cool enough,roll in log and slice crosswise into 1/4" strips.
  • Place pork in med. bowl and sprinkle with cornstarch. Season with salt and pepper and toss to coat. Wipe skillet clean with paper towels and heat remaining 3 tsps. oil over med-high. Add pork and cook until browned on one side,4 to 5 mins(pork will finish cooking later);transfer pork to plate.
  • Add mushrooms and ginger to skillet;season with salt and pepper. Cook till mushrooms are lightly browned 3 to 5 mins. Add cabbage,scallions,soy sauce,vinegar,egg strips,and pork;cook tossing occasionally,until cabbage is wilted and pork is cooked through,2 to 3 mins.
  • Hold each tortilla ,if using, with tongs and heat over gas burner flame till warm. (Alternately wrap stacked tortillas in foil,and heat in 375 degree oven).
  • To assemble,spread center of tortilla with thin layer of hoisin sauce;top with moo shy filling and roll up. Serve extra hoisin on side.

    This is one of my favorite Chinese dishes. It doesn’t have eye appeal, but what it lacks in appearance, it makes up in tastes. This recipe is a good attempt at a restaurant style dish, but not quite 100%. Moo shu has a sweet, smoky flavor, but the vinegar in this gives it a sour, pungent taste. See more in IMI........

    I've heard so much about hoisin sauce -- via "Simply Ming" etc -- but have yet to try it. I looked it up on Wiki and I'm intrigued. I love pork and cabbage and Oriental dishes, so this is a "must try". In fact, I think I will order this the next time we go to a Chinese restaurant.
