Asian Vegetable Rolls With Soy-lime Dipping Sauce - Diabetic Friendly

- Ingredients: shopping list
- ¼ cup reduced-sodium soy sauce shopping list
- 2 Tbs. lime juice shopping list
- 1 clove garlic, crushed shopping list
- 1 tsp. honey shopping list
- ½ tsp. Finely chopped fresh ginger shopping list
- ¼ tsp. dark sesame oil shopping list
- 1/8 to ¼ tsp red pepper flakes shopping list
- ½ cup grated cumber shopping list
- 1/3 cup grated carrot shopping list
- ¼ cup sliced yellow bell pepper ( 1-inch pieces ) shopping list
- 2 Tbs. Thinly sliced green onion shopping list
- 18 small lettuce leaves or inner leaves of bibb lettuce head shopping list
- sesame seeds ( optional ) shopping list
How to make it
- Combine soy sauce, lime juice, garlic, honey, ginger, oil and red pepper flakes in a small bowl. Combine cucumber, carrot, bell pepper and green onion in medium bowl. Stir 1 tablespoon soy sauce mixture into vegetable mixture.
- Place about I tablespoon vegetable mixture on each leaf. Roll up leaves and top with sesame seeds just before serving, if desired. Serve with remaining sauce.
- Serving Size: ( 3 rolls with 1 Tbs. Dipping sauce )
