Gypsy Potpie

- 6 cloves of garlic, minced shopping list
- olive oil [EVOO] shopping list
- 2 onions, finely chopped shopping list
- 2 celery sticks, finely chopped shopping list
- 5 medium baby marrows, cut in chunks shopping list
- 5 medium carrots, sliced or chopped shopping list
- 250 g streaky or back bacon, cubed shopping list
- 200 g chicken livers, chopped (optional) shopping list
- 500 g lean mince shopping list
- 2 x 400 g tins chopped tomatoes OR shopping list
- 6 fresh tomatoes, chopped (preferable) shopping list
- 10 ml (2 tsp) brown sugar [don’t frown like me, it works learned for a Romanian lady on this site, it sets all the other flavours up. Awesome] shopping list
- 250 ml (1 c) red wine shopping list
- a handful of origanum [oregano] or basil leaves, chopped shopping list
- 2 bay leaves shopping list
- ground sea salt and black pepper to taste shopping list
How to make it
- Sauté onions and garlic in oil over medium heat.
- Remove and keep warm.
- Repeat with mixture of carrots and celery
- then with mixture of meats
- .
- Mix all ingredients in potjie [three foot cast iron pot]
- and simmer over low heat until thick and flavourful.
- Season to taste.
- Crust:
- Sift 250 ml (1 c) cake flour,
- 10 ml (2 t) baking powder
- pinch of mustard,
- cayenne pepper and salt together.
- Add 250 ml (1 c) grated cheddar cheese.
- Beat 1 egg into
- 125 ml (½c) each: milk and sunflower oil.
- Mix with dry ingredients into a soft batter.
- Add 45 ml (3 tbsp) chopped parsley and coriander or basil leaves.
- Cover potjiekos [pot contents] with batter and simmer with lid on for ± 10 min. until cooked.
- Sprinkle liberally with grated cheese.
- Serve with pap (maize meal)[grits] or polenta.
- Deep red Claret at room temp goes down well with this dish
