St Pattys Mint Cheesecake Bars

- 1 box Betty Crocker Triple chocolate flavored cake mix shopping list
- 1/2 cup butter or maragine, softened shopping list
- 3 pkg (8oz) cream cheese, softened shopping list
- 1 container(16oz) Betty Crocker Rich & Creamy cream cheese flavored frosting shopping list
- 3 eggs shopping list
- 6-8 drops green food coloring shopping list
- 3-4 drops Wilton creme de menthe Candy Flavoring shopping list
- 1-10oz pkg Toll House dark chocolate & mint Morsels, divided shopping list
How to make it
- Heat over to 325 degrees. In a large bowl, beat cake mix and butter with electic mixer on low speed until crumbly; reserve 1 cup. In bottom of ungreased 13x9-inch pan, press remaining crumb mixture. Bake for 10 minutes. Remove from oven, cool slightly.
- In the same bowl, beat cream cheese and frosting with electric mixer on medium speed until smooth. Add in eggs, one at a time, until blended. Add 6-8 drops of green food coloring, or more depending on how dark you want the batter. Mix well. Then add 3-4 drops of candy flavoring, mix well and taste to adjust if more is needed to your preference. Pour over crust; sprinkle with reserved crumb mixture. Top with 1 cup of Toll House Morsels, reserving the rest of the bag for finishing touches.
- Bake about 45 minutes(about 42 mintues for dark or non-stick pan) or until set. Cool completely. Cover and refrigerate at least 2 hours or until chilled. Reserved morsels: In a small microwaveable bowl, add morsels and heat in microwave in 45 second intervals, stirring until completely melted and smooth. Place melted chocolate into a ziploc bag and clip a small corner, then drizzle over cooled bars.
- For bars, cut into 6 rows by 6 rows. Store in refrigerator. Enjoy.

Then cool, and melt remaining chips in microwave and drizzle---then wah-la
