How to make it

  • Preheat oven to 350F, grease 10 mini-muffin cups or line with paper liners.
  • In a bowl, beat together egg, egg white, yogurt, sugar, vanilla, lemon zest, lemon juice and olive oil. Set aside.
  • In another bowl, whisk together flour, baking powder and baking soda.
  • Add dry mixture to the wet ingredients, stirring quickly but gently just to combine.
  • Spoon into muffin cups.
  • Bake 12-15 minutes, until test done. Turn out immediately and cool on a rack.
