Ingredients

How to make it

  • Cut a thin slice off the top of each tomato.
  • Scoop out the pulp--you don't need to save it.
  • Turn the tomatoes upside down on paper towels to drain.
  • Mix the remaining ingredients in a small bowl.
  • Fill each tomato with some of the filling.
  • Chill for an hour or two.
  • The filling will taste even better if you let it chill for a while.
  • Refrigerate any leftovers.

    I made these as an appetizer for a friends baby shower. The guests loved them. They are fantastic and I plan on making them again.

    I get a lot of grape tomatoes but for this recipe I am definately getting some cherry tomatoes cause it sounds yummy. I somehow doubt there will be any leftovers around this house as good as these sound. Thanks for posting.
