Moroccan Coconut Candy

- 2 c. flaked coconut shopping list
- 3/4 c. evaporated milk shopping list
- 2 c. sugar shopping list
- 1 oz. butter shopping list
- 2 T. lemon rind shopping list
How to make it
- In 2 qt saucepan, combine coconut, milk, & sugar, simmer gently until soft ball is formed in cold water.
- Add butter & lemon rind.
- Cool to room temperature in the pan.
- Beat as you would do fudge until thick & glossy.
- Pour into a square (8x8 inch) pan lined with wax paper.
- Chill & cut into 1 inch squares.
- Yield: 1 1/2 lbs coconut fudge.

Made this for a dinner party and everyone loved it. I shaved dark chocolate on top and we were all reminded of Almond Joy. Next time I might wrap almond halves into the middle just to get the full effect. Thanks for this fabulous recipe!!!
