How to make it

  • In 2 qt saucepan, combine coconut, milk, & sugar, simmer gently until soft ball is formed in cold water.
  • Add butter & lemon rind.
  • Cool to room temperature in the pan.
  • Beat as you would do fudge until thick & glossy.
  • Pour into a square (8x8 inch) pan lined with wax paper.
  • Chill & cut into 1 inch squares.
  • Yield: 1 1/2 lbs coconut fudge.

    Made this for a dinner party and everyone loved it. I shaved dark chocolate on top and we were all reminded of Almond Joy. Next time I might wrap almond halves into the middle just to get the full effect. Thanks for this fabulous recipe!!!
