How to make it

  • Place small sauce pan over low heat to start prewarming the pan.
  • In a bowl, whisk yolks "till smooth.
  • Drizzle lemon juice in yolks while continuing to whisk. Adjust your personal tang level by using anywhere from 1 to 4T lemon juice.
  • Warm broth in microwave.
  • Drizzle broth slowly into yolks while continuing to whisk to keep from scrambling the yolks.
  • Pour sauce into sauce pan and continue to whisk until sauce starts to thicken.
  • Remove from heat and cover for 5 minutes.
  • This is not my own recipe but one I learned from somewhere. Wish I could give proper credit.

    Good one! As long as the broth isn't too hot when adding to the egg yolks there should be no problem of curdling.
