Egg-lemon Sauce Recipe
delightful lemon sauce that compliments any meal and very easy to make.

Ingredients
  • 4 egg yolks
  • 4T lemon juice
  • 4T chicken or beef boulion

Directions
  1. Place small sauce pan over low heat to start prewarming the pan.
  2. In a bowl, whisk yolks "till smooth.
  3. Drizzle lemon juice in yolks while continuing to whisk. Adjust your personal tang level by using anywhere from 1 to 4T lemon juice.
  4. Warm broth in microwave.
  5. Drizzle broth slowly into yolks while continuing to whisk to keep from scrambling the yolks.
  6. Pour sauce into sauce pan and continue to whisk until sauce starts to thicken.
  7. Remove from heat and cover for 5 minutes.
  8. This is not my own recipe but one I learned from somewhere. Wish I could give proper credit.

Good one! As long as the broth isn't too hot when adding to the egg yolks there should be no problem of curdling.
