How to make it

  • Note: there is no baking soda in the recipe.
  • Preheat oven to 350F
  • Grease and flour a 10 inch round cake pan
  • I simply mixed all ingeredient together just to blend
  • the original instructions say to first add the yoghurt, eggs, sugar and flour and then blend in the oil, baking powdwer, rum and vanilla, not to overmix
  • Pour into pan and bake 45 minutes or until top is golden brown and a tooth pick comes out clean.
  • I baked mine about 10 minutes longer and covered with foil the last 10 minutes of baking.
  • Cool in pan 10 mins and then remove.
  • Serving suggesrtions: raspberries and creme fraiche, or vanilla ice cream and drizzled honey
