How to make it

  • In a dry pan, over medium heat, fry the bologna until slightly browned on both sides; set aside.
  • In the same pan, fry the egg in a little butter or olive oil until done to your liking.
  • Place bologna, cheese and fried egg on one slice of bread.
  • Top with lettuce and tomotoes.
  • Season with salt and pepper, optional.
  • Spread other slice of bread with hot mustard, and place on top of sandwich and cut in half.
  • Serve.
  • NOTE: You can also make this without the fried egg. It's delicious either way! Also, feel free to use any mustard of choice, this just happens to be my favorite way to eat this, or omit the mustard and top with ketchup or mayonnaise instead.

    My Dad and my FIL both had their own versions of fried bologna! Brings back memories! My FIL would also do it with Polish beef loaf...which I thought was bologna anyway~!

    Reminds me of a western song popular in the early 70's. About a guy who gets picked up in a small southern town and taken to jail for speeding and since it was on a Friday, he had to sit there until Monday. And the Jailers wife brought them "Fried bologna, eggs and gravy" 3 times a day. Tom T. Hall sang the song.

    Wow. What a fancy take on bologna! Sounds like a tasty topping for the French bread. Ours traditionally were bologna, white bread, and the only thing "French" was the mustard. ;o)

    This should read "Fried Bologna Deluxe" - the ones I had when I was a kid, many, many moons ago, were fried bologna, Miracle Whip and white bread!

    With the weather being mild,and,having a cycling clutch of friends,this would be a nice meal on wheels type of sandwich.
