Palak Dal - Spinach And Lentils

- 2 cups red/yellow lentils, washed shopping list
- 5 cups of vegetable broth shopping list
- 1 tsp. turmeric shopping list
- salt to taste shopping list
- 1 bag spinach shopping list
- 1 large onion, chopped shopping list
- 5 cloves minced garlic shopping list
- 1 tbsp. minced ginger shopping list
- 2 tomatoes, chopped shopping list
- 1 tsp. red chili paste shopping list
- 2 tsp. cumin seeds shopping list
- 3 tsp. coriander powder shopping list
- 2 tsp. garam masala shopping list
- 1 tsp. cayenne pepper shopping list
- 2-4 slugs of olive oil shopping list
How to make it
- Cook the lentils in the broth with the turmeric and salt for 30 minutes.
- Add the spinach and cook until the spinach has wilted and mixed with the lentils, about another 30 minutes.
- Meanwhile,brown the onions in the olive oil and then add the garlic, ginger, tomatoes, chili paste, cumin seeds, coriander, garam masala and the cayenne pepper and stir for 2 minutes.
- Add this onion mixture to the Dal and the spinach. Stir and heat through. Yum!
