Lobster Hoagies

- 3 Cups of Cooked lobster meat (Picked Over) shopping list
- ( You May Substitute Fresh crab Leg Meat for the lobster and It Is Still A Treat) shopping list
- 3 celery ribs Diced shopping list
- 1/4 Cup Chopped fresh flat-leaf parsley shopping list
- 3/4 Cup Mayonaise shopping list
- 1 Teaspoon Dijon mustard shopping list
- 1 Tablespoon Fresh Squeezed lemon juice shopping list
- 1/2 Teaspoon paprika shopping list
- kosher salt and Freshly ground pepper to Taste shopping list
- 6 Side Sliced hoagie rolls shopping list
- 2 Tablespoons unsalted butter at Room Temperature shopping list
How to make it
- Preheat the Oven to 350F
- Put the Lobster Meat, Celery and Parsley in a Large Bowl.
- Combine the Mayonaise, Mustard, Lemon Juice, Paprika, Salt and Pepper to Taste in a Small Bowl and Mix. Fold Into The Lobster and Mix Well Again.
- Spread Just A Bit of Butter On The Insides of Each Hoagie Roll, Open Them Up A Bit and Toast Until Lightly Golden Brown.
- Remove from Oven Cool Just A Sec. Then Spoon Equal Amounts of the Lobster Salad Into Each Roll and Serve at Once.

Delicious as always Tammy. I do something similar but on bread, the rolls will be much better, and I sub some Italian or French dressing for part of the Mayo. Have also been known to toss a leaf or two of lettuce on this to crisp it up a bit. Haven't...more
