How to make it

  • Preheat the Oven to 350F
  • Put the Lobster Meat, Celery and Parsley in a Large Bowl.
  • Combine the Mayonaise, Mustard, Lemon Juice, Paprika, Salt and Pepper to Taste in a Small Bowl and Mix. Fold Into The Lobster and Mix Well Again.
  • Spread Just A Bit of Butter On The Insides of Each Hoagie Roll, Open Them Up A Bit and Toast Until Lightly Golden Brown.
  • Remove from Oven Cool Just A Sec. Then Spoon Equal Amounts of the Lobster Salad Into Each Roll and Serve at Once.

    Delicious as always Tammy. I do something similar but on bread, the rolls will be much better, and I sub some Italian or French dressing for part of the Mayo. Have also been known to toss a leaf or two of lettuce on this to crisp it up a bit. Haven't made these for a while so thanks for the great post and the elbow in the ribs. RJ
