Cheesy Penne Pasta

- 1 pound penne pasta shopping list
- 1 1/2 cups cottage cheese shopping list
- 1 cup ricotta cheese shopping list
- 1 1/2 cups shredded mozzarella cheese, divided shopping list
- 3 tablespoons chopped basil shopping list
- 2 teaspoons olive oil shopping list
- 1 medium onion, chopped shopping list
- 3 cloves garlic, finely chopped shopping list
- 1 14.5 ounce can diced tomatoes shopping list
- 1 8-ounce can tomato sauce shopping list
- 1 teaspoon dried oregano shopping list
- 1 teaspoon dried rosemary shopping list
- 1 teaspoon dried thyme shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- Cooking spray shopping list
- 1/4 cup grated Parmesan shopping list
How to make it
- Preheat oven to 400 degrees.
- Combine the cottage cheese, ricotta cheese, 1/2 cup mozzarella and basil in a bowl and set aside.
- Cook pasta until al dente, rinse with cold water and set aside.
- Heat the oil in the same pot over medium heat.
- Add the onion and cook stirring occasionally, until translucent.
- Add the garlic and cook for about 30 seconds more.
- Add the tomatoes, tomato sauce, oregano, rosemary, thyme and salt and pepper.
- Bring to a boil, then reduce heat and simmer until sauce thickens slightly.
- Remove from heat and add pasta.
- Add cottage cheese mixture and gently mix until combined.
- Spray a 9 by 13-inch glass baking dish with cooking spray.
- Add the pasta to the dish, and top with remaining cheeses.
- Bake for 30 minutes.
