Crab Stuffed Chicken Breasts

- 6 whole breasts, boned & skinned shopping list
- Stuffing: shopping list
- 1/2 c herb seasoned stuffing mix shopping list
- 1/2 c celery shopping list
- 1/2 c green onion shopping list
- 1 5 oz can crabmeat, drained shopping list
- 3 T butter shopping list
- 3 T dry white wine shopping list
- paprika shopping list
- Sauce: shopping list
- 1/3 c swiss cheese, grated shopping list
- 1/3 c dry white wine shopping list
- 3 T butter shopping list
- 3 T flour shopping list
- 1 pint half/half cream shopping list
How to make it
- Prepare stuffing mix. Place butter in mixing bowl and melt in microwave. Add onion and celery & cook 2 minutes, uncovered, stirring once. Add wine, stuffing mix and crabmeat. Mix well. Set aside.
- Pound chicken to flatten by placing between 2 pieces of wax papaer & pound with rolling pin until thin. Sprinkle with salt & pepper. Divide stuffing among breasts, roll & secure with toothpicks. Sprinkle with paprika. Cover with waxed paper and cook in microwave for 10 minutes turning dish once. For convention oven, melt butter and cook ingredients in saucepan. Bake 375 for 45 minutes.

This was awesome!!!! I forgot to take a photo, sorry. But, the chicken was tender and the fresh crab meat we had was delicious in this. Oh, but we didn't have any swiss cheese, so we used Le Gruyere cheese instead. Thanks, again, for sharing your rec...more
