Blueberry Pinwheels With Cream Cheese Glaze

- Dough: shopping list
- 2 1/2t dry yeast(1 packet) shopping list
- 3 cups flour shopping list
- 3T butter melted but cooled shopping list
- 1t salt shopping list
- 1/4 granulated sugar shopping list
- 1 cup buttermilk, milk or water, slightly warmed(110 degrees) shopping list
- Blueberry filling: shopping list
- 1 cup fresh blueberries, rinsed shopping list
- 3T orange juice shopping list
- 3T powdered sugar shopping list
- 1T corn starch shopping list
- 1t fresh nutmeg shopping list
- 1 teaspoon lemon zest shopping list
- Cream Cheese Glaze: shopping list
- 6oz cream cheese, softened shopping list
- approx. 1/4 cup milk or half and half shopping list
- approx. 1/4 cup powdered sugar shopping list
- juice from 1 lemon shopping list
How to make it
- For Dough:
- Toss all dry ingredients in medium bowl, to combine.
- Add butter and water and mix with hands, or in a mixer with a dough hook, until combined and dough becomes workable. (about 5-7 minutes)
- Set aside to rest while preparing filling
- Combine blueberries, orange juice, sugar and corn starch in medium sauce pan See Photo. Cook on medium heat, stirring frequently to break up berries and combine. Bring to boil and continue to cook, stirring often, until thick and bubbly. Set aside to cool slightly.(do not use until mixture is cool enough to touch :) See Photo
- Place dough on sugared board and spread with fingers or rolling pin to achieve approx a 9X13 rectangle. See Photo
- Spread cooled filling over dough to approx. 1/2 inch from all sides See Photo. Roll, starting from a long side, jelly roll style until reaching the other end. Press seams together to seal. Place roll in freezer for 10 minutes, if desired, to aid in cutting. See Photo
- Cut into about 12 pieces, about 1 inch wide and place, one of the cut sides down, into greased muffin tin. See Photo
- Bake at 350 for 12-14 minutes until just browning.
- Let cool slightly, then remove to wire rack.
- Combine all glaze ingredients, adding more sugar/milk to get desired consistency and spread, drizzle or pipe glaze onto slightly warm rolls.

These were great, for me!! The kids thought the glaze was too tart, and without the glaze not sweet enough lol, go figure. The dough was a little dry, but I think that was because I was trying to get the color on it that Keni got in her pic. The b...more
