Potato Puffs (baked Not Fried)

- Potatoes (one per person) shopping list
- salt & pepper (optional) shopping list
- 1 egg (beaten) shopping list
- parsley for garnish shopping list
How to make it
- [directions as they are in the book; not written in the format like we are familiar with now]
- "Prepare the potatoes as directed for mashed potato. While hot, shape in balls about the size of an egg. Have a tin sheet well buttered, and place the balls on it. As soon as all are done, brush over with beaten egg. Brown in the oven. When done, slip a knife under them and slide them upon a hot platter. Garnish with parsley and serve immediately."
- NOTES FROM ME:
- I would suggest baking them at around 350 degrees for maybe 15 minutes (watch them carefully).
- If you add some milk, butter & ranch dressing powder to the potato mixture, it will give them a delicious flavor and they'll look good, too. If you don't have the powder, add regular ranch salad dressing and leave out the milk.
- You can use a large pastry tip & bag to pipe them decoratively onto the baking sheet for a more festive look.
