Italian Orzo Salad

- 6 c chicken broth shopping list
- 1 pkg (16 oz) orzo pasta shopping list
- 1/3 c olive oil shopping list
- 1/4 c red wine vinegar shopping list
- 2 TB lemon juice shopping list
- 1 TB honey shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 2 c chopped plum tomatoes shopping list
- 1 c chopped,seeded,peeled cucumber shopping list
- 1 c fresh basil leaves,thinly sliced shopping list
- 4 green onions,chopped shopping list
- 1/2 c fresh baby spinach shopping list
- 1-3/4 c (7 oz) crumbled feta cheese shopping list
- 1/2 c pine nuts,toasted shopping list
How to make it
- In large saucepan,bring broth to a boil;add pasta. Return to boil. Cook,uncovered,for 10-12 mins or till pasta is tender. Meanwhile,in small bowl,whisk oil,vinegar,lemon juice,honey,salt and pepper.
- In large bowl,combine tomatoes,cucumber,basil,onions,and spinach.
- Drain pasta;add to tomato mixture. Drizzle with dressing;toss to coat. Chill till serving.
- Just before serving,stir in cheese and pine nuts.
