- 1 lb jar of grape leaves in brine (from international grocery store) shopping list
- Meat: shopping list
- 2 Lbs ground beef shopping list
- 2 tbsp, butter shopping list
- 3-4 large onions, minced shopping list
- salt and pepper (to taste) shopping list
- 4 eggs shopping list
- 1cup (or more) rice shopping list
- 1 bunch minced cilantro shopping list
- Liquid Mixture: shopping list
- 1cup white wine (I use a cheap, sweet pinot wine) shopping list
- Enough beef stock to cover rolls shopping list
- salt (to taste) shopping list
- Minced parsley and sprigs of fresh dill shopping list
- Grated rind of 1 lemon shopping list
- juice from 2 lemons shopping list
- Final Topping: shopping list
- lemon juice shopping list
- Yogurt or sour cream shopping list
How to make it
- Melt butter add minced onion and sauté lightly
- Add onion to meat, eggs, rice, salt, pepper and minced cilantro and mix thoroughly
- Remove grape leaves from the brine and rinse them off with fresh water.
- Select 1 leaf and place a spoonful of meat on leaf, (place in a line across base of leaf)
- Tuck in edges of leaf and roll into cigar roll shape.
- Arrange rolls in layers in deep heavy pan and pour Liquid Mixture over them.
- As I place the layers in the pan, I add sprigs of dill to each layer.
- Cover pan and cook slowly over low heat at least 1 hour.
- When serving, pour more lemon juice over rolls on the plate and top with yogurt or sour cream.
