How to make it

  • Cook ground beef in a large Dutch Oven about 5 minutes or until brown. Drain and set aside.
  • Remove excess oil but leave the pan bits in there.
  • Heat olive oil in the same Dutch Oven over medium-high heat and add onion, celery, carrot and garlic. Saute about 5 minutes or until vegetables are tender; add pepper
  • Stir in tomatoes, broth, basil, tomato paste and thyme. Simmer uncovered over medium-low heat for 20 minutes, stirring occasionally.
  • Add kidney beans, mushrooms and beef. Simmer 10 more minutes.
  • It doesn't get any doner than that. Serve it up with your favorite soup accessories. Crackers of choice, hard crusted bread, rolls, etc.

    Interesting twist. We fixed this Wed night without the oregano. Hmmm... found we had a winner that was not Italian in flavor but still a hit. The mix of vegetable soup flavor combined with the chili flavor was delightful.

    Fixed this for dinner last evening. Truly outstanding. Nice color and wonderful flavors. I added about 6 drops of Red Pepper sauce to the bowl of leftovers I had for lunch today and it brought out even more of the robust flavors. Very nice. Thanks for posting the recipe.

    hmmm, i was looking for a veg. beef soup that i loved as a kid, and every other recipe was one that didn't seem right, but then i found this recipe and it was perfect! thanks so much! :)

    Well did it work for you? If so your soup is different from mine and deserves its own title. Please post is as a new recipe. Things don't have to change much to make it a new "delight".

    I made it with ground turkey instead of beef - still good, but slightly healthier. When I added the beef broth, I also added 3 - 4 cubed red potatoes. After 20 minutes simmering, they were perfectly cooked! Instead of adding the beans and mushrooms with the meat, I added a cup of frozen corn and a cup of frozen green beans. Delicious!

    I was attempting to duplicate a soup I had at the Providence Biltmore Hotel this weekend.. and succeeded, thanks to this recipe!
