Tropical Pork Roast

- Recipe can be made in a Slow cooker or a Dutch Oven shopping list
- Adjust quantities to your own taste!! shopping list
- pork roast or pork tenderloin (2-3 Pounds) shopping list
- 2 Tbsp olive oil shopping list
- 1/2 Cup yellow onions shopping list
- 1 Tbsp garlic minced shopping list
- 1/4 Cup honey shopping list
- 1/4 Cup ketchup shopping list
- 1/4 Cup sweet chili sauce shopping list
- 1 can pineapple chunks in own juice (not syrup) reserve liquid shopping list
- 2 Tbsp cornstarch shopping list
- 2 Tbsp Worcestershire sauce shopping list
- 1 Tsp paprika shopping list
- 1/2 Tsp cayenne pepper shopping list
- 1/2 Tsp celery seed shopping list
- salt and pepper to taste (a pinch of salt and a few grinds of fresh cracked pepper) shopping list
How to make it
- Turn slow cooker to High or place Dutch oven over medium-high heat.
- (If using Dutch oven, preheat oven now too)
- Heat olive oil and add onions, saute for a few minutes and add garlic and saute a few minutes longer.
- Add:
- Worcestershire sauce
- Paprika
- Cayenne pepper
- Celery seed
- Honey
- Ketchup
- Sweet Chili sauce
- Salt and Pepper
- Mix well.
- Add cornstarch to reserved pineapple juice and mix well; add to pot
- Add pineapple junks and mix all ingredients together.
- Add Pork and spoon above ingredients over roast.
- Cover and cook on low until internal temperature reaches: 160 for Medium/170 for Well done.
