How to make it

  • Cook pasta per package directions while preparing sauce.
  • Saute onion in butter in medium sauce pan until translucent.
  • Add garlic and stir and cook for about 5 minutes on medium heat.
  • Add clam juice or stock, seasoning, mascarpone, crab and the juice from the canned tomatoes.
  • Cook on medium heat, stirring occasionally, until cheese is melted and mixed in. See Photo
  • Slice mozarella, then cube about 7oz into about 1/2 in pieces, and remaining oz or so, cut into about 1/4 inch pieces. See Photo
  • Add larger cut pieces to pan along with the Asiago, and continue to heat through and melt cheese. The mozarella won't melt totally smooth, and that's helps give the sauce texture. :)
  • Lower heat and add half and half and salt and fresh ground black pepper. Stir and heat just until heated through.
  • In microwave safe bowl or small saucepan, add drained tomatoes and heat just until warmed through. Add smaller mozarella cubes and mix. See Photo
  • Toss finished crab sauce with drained, warm pasta.
  • Add pasta to individual serving plates or large platter and top with a spoonful of the tomato/cheese mixture and sprinkle with Parmesan cheese.
