Four Cheese Crab Penne

- 1lb whole wheat penne(other pasta can be subbed, but this holds the sauce perfectly, in my opinion :) shopping list
- 4T butter(can sub olive oil or half of each, if desired) shopping list
- 4 cloves garlic, minced shopping list
- 1 small onion, diced shopping list
- 1T fresh Italian herbs(basil, oregano, etc), minced shopping list
- 1/4 cup clam juice or fish, vegetable or chicken stock shopping list
- 1/2 cup half and half shopping list
- 8oz mascarpone cheese shopping list
- 8oz fresh mozarella shopping list
- 4oz Asiago, grated shopping list
- about 1/4 cup fresh Parmesan, grated shopping list
- 8oz fresh or frozen crab meat(I can't say how canned would be) shopping list
- 1 14.5 oz can diced tomatoes(Italian or garlic/onion style, OR an additional 2t of fresh Italian herbs, minced, added) shopping list
- salt and pepper shopping list
How to make it
- Cook pasta per package directions while preparing sauce.
- Saute onion in butter in medium sauce pan until translucent.
- Add garlic and stir and cook for about 5 minutes on medium heat.
- Add clam juice or stock, seasoning, mascarpone, crab and the juice from the canned tomatoes.
- Cook on medium heat, stirring occasionally, until cheese is melted and mixed in. See Photo
- Slice mozarella, then cube about 7oz into about 1/2 in pieces, and remaining oz or so, cut into about 1/4 inch pieces. See Photo
- Add larger cut pieces to pan along with the Asiago, and continue to heat through and melt cheese. The mozarella won't melt totally smooth, and that's okay..it helps give the sauce texture. :)
- Lower heat and add half and half and salt and fresh ground black pepper. Stir and heat just until heated through.
- In microwave safe bowl or small saucepan, add drained tomatoes and heat just until warmed through. Add smaller mozarella cubes and mix. See Photo
- Toss finished crab sauce with drained, warm pasta.
- Add pasta to individual serving plates or large platter and top with a spoonful of the tomato/cheese mixture and sprinkle with Parmesan cheese.
