How to make it

  • Preheat the oven to 350
  • Cut the top of the tomatoes and scoop out the insides. S&P the inside.
  • Sautee the sausage, breaking it up, and onions in the olive oil. Add the garlic just before the sausage looks done.
  • In a bowl mix together the basil, thyme bread crumbs and parmesan. Add in the sausage mixture and stir.
  • Stuff the tomatoes full with the mixture. Sprinkle parmesan generously over the top. Drizzle with olive oil.
  • Bake in oven for about 25-30 minutes. Then pop under the broiler 3-5 minutes until tops have browned and crisped. Yum!
  • *This maybe could fill 3 tomatoes depending on the size of them. ;)
