Salmon Cakes With Lime Sesame Sauce

For Cakes
- 2lbs fresh salmon fillets(broiled, grilled, poached, etc, but lightly seasoned), crumbled and cooled shopping list
- 2 cups mashed potatoes shopping list
- 2 eggs shopping list
- 3 green onions, chopped shopping list
- 1 bell pepper, diced shopping list
- 1/4 cup fresh parsley, chopped shopping list
- 4oz soft goats cheese shopping list
- juice from 1/2 lime shopping list
- 1T Dijon shopping list
- 2t Old Bay shopping list
- kosher or sea salt and fresh ground pepper shopping list
- 1 cup Panko bread crumbs shopping list
- *1/3 cup fine bread crumbs(optional-I don't use these) shopping list
- canola or peanut for frying shopping list
For Sauce
- 1/2 cup sour cream shopping list
- 1/2 cup mayonnaise shopping list
- juice from 1 lime shopping list
- 1T sesame seeds, toasted shopping list
- salt and pepper shopping list
How to make it
- Combine all cake ingredients other than bread crumbs and oil in medium glass bowl. See Photo
- Mix well using your hands or...well, no, just use your hands.;)
- Refrigerate about 1 hour.
- When cooled, form into patties. If the mixture doesn't hold together too well, you can add the fine bread crumbs a lil at a time until you get a texture you are happy with. I don't do this. The patties I make are a lil delicate, but we like them better without the added breading :)
- Heat oil in heavy skillet(I use cast iron)--you only need to cover the bottom of the pan, you aren't deep frying these. More oil may be needed, depending on how much is absorbed on each batch :)
- Spread Panko in shallow dish(a pie plate works great)
- Lightly coat each patty with Panko and fry until desired brownness on both sides. Again, we like them lightly browned, as in the photo, but you can just let them cook a little longer, if you like them firmer and darker
For Sauce
- Combine all ingredients and let rest in fridge until ready to serve.
- Plate with a small bit of sauce over the patties, and lime wedges
- *the photo is poor quality of the sauce, but I couldn't tell that by looking at the pic on the camera, so by the time I uploaded it, the sauce was gone... no retake option! :)
