How to make it

  • Dough
  • In a bowl mix flour, sugar and salt. Then add the butter and water and use your hands or a dough blender to mix it all.
  • Make a ball with the dough, wrap it in plastic wrap and put it in the fridge for at least 30 minutes.
  • Filling
  • Pour the lime juice and port over the apple wedges. Mix in all the dry ingredients and blend well together.
  • Take the dough off the fridge and roll it out. Wrap the dough around the rolling pin and unroll it onto a pie pan.
  • Shape it to fit the pan, take a fork and poke holes in the bottom of the crust.
  • Pour the pie filling and garnish with 5 tsp of butter.
  • Bake the pie at a 375F/180C oven for about 50 minutes or until golden.
  • Sauce
  • While the pie is baking, take a pan and pour in 3 tbsp balsamic vinegar, 1/2 cup port wine, 1/2 tbsp cinnamon and 2 tbsp sugar.
  • Let it simmer and reduce to at least half.
  • After the pie is baked, let it rest off the oven for about 20 minutes before cutting a slice, otherwise it might fall apart.
  • Serve each slice with ice-cream, drizzle with the sauce and sprinkle some cinnamon over the pie.
