Ingredients
  • 1 Tbls honey
  • 1 TbLs sugar, or to taste
  • 2 Tbls balsamic vinegar
  • 3 cups blueberries ( about 1 lb)
  • 1 lb peaches or nectarines, sliced
  • 1/2 tbls black pepper ( optional)

Directions
  1. Boil sugar wit vinegar, and 1 cup blueberries in a 1 -quart heavy saucepan, stirring, i min. remove from heat.
  2. combine remaining blueberries with peach sliced in large bowl.
  3. toss with hot blueberry syrup and black pepper, then add honey to taste
  4. let stand for 30 minutes, tossing occasionally.

I really like fruit with balsamic vinegar. Your recipe sounds tasty.

The use of black pepper is a must too... it livens the flavor of fruit, gives it that extra something.

Berries and balsamic and pepper is always a 5 to me! I like white balsamic sometimes, for just a slightly mellower note.


Nice recipe. I would back off to 1 teaspoon pepper.
Had the berries for a biscuit recipe. Had the peaches for a pie recipe. Wound up making this recipe to spoon over some breakfast biscuits.
