How to make it

  • In a large bowl, beat softened butter or margarine, oil and sugar till smooth.
  • Beat in the eggs well and add the vanilla
  • In another bowl combine flour, salt, baking powder and mix well
  • Stir in the nuts and raisins to dry mixture to coat well
  • Add liquid mixture and stir well with a wooden spoon.
  • lastly stir in the drained green tomatoes
  • Batter will be loose
  • Pour into a greased and floured bundt pan
  • Bake in a 350F about 60 to 70 minutes or tested done
  • let cool in pan 15 minutes and then carefully remove
  • let cool completely
  • Dust heavily with powder sugar or add a glaze if desired
  • Flavor improves with age
  • Note: may be baked in loaf pans and adjsut for baking time
