Green Tomato Cake

- 2 full cups of chopped green tomatoes. I use the food processor to coarse chop shopping list
- Then drain mixture very well, pressing out excess liquid from a colander or strainer - Set aside shopping list
- 3 cups flour shopping list
- 2 cups sugar shopping list
- 3 eggs shopping list
- 1 stick butter or margarine shopping list
- 1/2 cup canola oil shopping list
- 1 tsp pure vanilla extract shopping list
- 2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 1 cup chopped walnuts shopping list
- 1/2 cup light raisins shopping list
- 1/2 cup dark raisins or currants shopping list
- powder sugar or a desired glaze, optional shopping list
How to make it
- In a large bowl, beat softened butter or margarine, oil and sugar till smooth.
- Beat in the eggs well and add the vanilla
- In another bowl combine flour, salt, baking powder and mix well
- Stir in the nuts and raisins to dry mixture to coat well
- Add liquid mixture and stir well with a wooden spoon.
- lastly stir in the drained green tomatoes
- Batter will be loose
- Pour into a greased and floured bundt pan
- Bake in a 350F about 60 to 70 minutes or tested done
- let cool in pan 15 minutes and then carefully remove
- let cool completely
- Dust heavily with powder sugar or add a glaze if desired
- Flavor improves with age
- Note: may be baked in loaf pans and adjsut for baking time
