Poor Boys Nut Pie Oatmeal Pie Recipe

When you can't afford nuts, this is a simple pie that tastes great. A faux pecan pie if you will. Aunt Mabel and Uncle Estin favorite Friday dessert.

Ingredients
- 9 inch pie shell, unbaked
- 3/4 cup of sugar
- 1/2 cup of butter
- 2 eggs
- 1/2 teaspoon of salt
- 3/4 cup of dark corn syrup
- 3/4 cup of uncooked oatmeal
- 1 teaspoon of vanilla
Directions
- Cream butter and sugar.
- Add eggs, one at a time, beating slightly.
- Fold in salt, corn syrup, oatmeal and vanilla.
- Pour into pie shell.
- Bake at 325 degrees for 45 minutes until set.
- Of course Aunt Mabel and Uncle Estin served this with a dollop of whipped cream. (They had fresh cream from their own cows!)
- Soooooo good!
